BBQ Spiced Roasted Cauliflower
Roasted cauliflower is great for snacking, an exciting side, and a fantastic addition to other dishes. There are plenty of flavor options: curry, graham masala, or other Indian spices are super popular. Here I use 4 Rivers Smokehouse All-Purpose Rub, a signature blend which came in my Hatchery Tasting Box subscription. (These aren't affiliate links, I'm just saving you the google.)

Ingredients
- 1 head cauliflower
- 2 Tablespoons vegetable oil
- 2 Tablespoons BBQ spice blend
To do
Preheat oven to 400 F / 200 C
Rinse cauliflower and pat dry with a towel. Cut into florets —you want them to be more or less than same size for even cooking.
Place in a large bowl and drizzle with 2 tablespoons vegetable oil.
Sprinkle with spices. Toss to coat.
Place a sheet of parchment paper on a large baking sheet. Spread out the florets so they are evenly spaced -- they roast better this way. If you have a really big head of cauliflower you'll need to use two pans.
Roast at 400 degrees F/ 200 C for 15 minutes, remove from oven. Stir the florets. Return to oven for 15 more minutes or until done. Cooking time depends on your oven, so start checking after 10 minutes. Enjoy!
