Spicy Peach Jam Tart
When you want something sweet and fruity, but fresh fruit isn't in season, try making a jam tart. It makes sense right? During winter, late fall, or early spring using preserves helps welcome a little bit of the summer into your life.
Ingredients : Crust
- 1 cup finely ground cashews (use a food processor to grind cashews) you can use raw or roasted, both are good. Roasted will have a stronger nutty flavor, raw cashews will be milder and so the peach flavor will predominate.
- ½ cup whole wheat pastry flour
- 1/3 cup coconut oil
- ¼ teaspoon baking powder
- ½ teaspoon salt
- 1/3 cup sugar
- ½ teaspoon vanilla
To do
Grind the cashews using a food processor, then mix the rest of the ingredients together. Press the mixture into a greased 9 inch tart pan with a removable base. Keep pressing the crust to create an even and solid layer on the bottom and sides of the pan.
Ingredients: Filling
- 1 jar peach jam Bonne Maman or Smuckers are good choices
- 1/4 teaspoon Jolene's Jar Bloody Mary Booster *
- 2 teaspoons cocoa powder
*Before discovering Jolene's spice mix from my Hatchery Tasting Box I used 1/2 teaspoon ancho chili powder as the spice, but everyone likes it better when I use the Bloody Mary Boost. (These aren't affiliate links, just me helping you be one click away from awesome stuff.)
To Do
Stir these ingredients together and gently spread over crust.
Bake on middle rack of oven at 350 degrees F / 175 C for about 35 minutes.
Remove from oven and cool completely for 1 hour on a metal rack. Then remove from tart pan and enjoy!
