I love making kimchi and then finding innovative ways to eat it. This dish combines tahini with kimchi creating a spicy creamy sauce.
Ingredients:

- soba noodles
- 1 cup kimchi (especially homemade)
- 1/3 cup tahini
- 4 scallions, thinly sliced
- 2 Tablespoons sesame oil
- 2 Tablespoons sesame seeds
- red pepper threads (available in Korean markets)
- limes
To Do:
Begin cooking the soba noodles. In a mixing bowl, place tahini and 2 Tablespoons hot water, stir until smooth and add the kimchi. After you drain the sobas, place the steaming hot noodles in the bowl with the kimchi-tahini mixture. Toss to coat. Serve in bowls drizzled with sesame oil, and topped with scallions, sesame seeds, and red pepper threads. Serve with lime wedges.
